Working with Crooked Stave Artisan Beer Project (Denver, CO) and Brasserie Trois Dames (Ste. Croix, Switzerland) gave us the opportunity to explore how wort brewed from the same recipe would express itself through fermentation with each brewery’s unique mixed culture. Over months of patient fermentation in Spanish Sherry casks, the idiosyncrasies of our respective microorganisms began to unfold. Unfiltered, unpasteurized, and 100% bottle conditioned.
